Ingredients (Serves 1 little tummy- double/multiply up as required!) -
🛒 1 Nana Manners Silly Sausage - we used the triangle shape (available at Tescos)
🛒 3 cherry tomatoes on the vine
🛒 ¼ courgette, sliced
🛒 Drizzle of olive oil
🛒 60g potato gnocchi
🛒 A small handful of freshly chopped parsley
🛒 ½ lemon, zest grated and juiced (optional)
✅ How to cook -
⭐️ Pre-heat the oven to 170°C (fan)
⭐️ In a small roasting tin, toss the sausages, courgette and cherry tomatoes with the olive oil and roast for 15 minutes.
⭐️ Mix the gnocchi with a drizzle of olive oil, add to the roasting tin and place in the oven for 5 minutes or until the sausages are cooked through.
⭐️ Next heat the grill to medium-high and put the roasting tin under the grill for 5 minutes until everything is browned slightly (crisp means more flavour!)
⭐️ Finally top with the parsley and the lemon zest and juice (optional but super tasty!)
