We love this hidden veg recipe! A delicious, light and super tasty pasta with tomato and hidden veg sauce combination. This recipe is a favourite across many households as it's a nice and easy way for the whole family to eat more veg. Perfect for those midweek meals when prep time is of the essence. The recipe time requires minimal input so you can get on with all those other jobs there are to do whilst it's cooking. You'll want to save this super tasty and healthy hidden veg pasta sauce recipe! This delicious meal will also tick of those essential '5-a-day' must haves as well as being a great tasting mealtime favourite, and the sauce is freeze-able too! What's not to love?

Ingredients
- 1 tsp olive oil
- 1 large onion, chopped
- 2 celery sticks, chopped
- 2 carrots, chopped
- 1 leek, chopped
- 2 peppers, deseeded and chopped
- 2 cans chopped tomatoes with garlic
- 2 tbsp coconut blossom and balsamic vinegar or (gf alternative)
- 300g of your favourite dried pasta shapes
- Parmesan, shaved, and rocket, to serve (optional)
Step 1: Heat the oil in a large non-stick saucepan and gently cook down the onion, celery, carrots and leek until soft, about 20 mins. Add the peppers and cook for roughly 10 mins more, then tip in the tomatoes, coconut blossom and vinegar. Gently simmer the vegetables for at least another 20 minutes - as the longer the better to really cook them down.
Step 2: Choose your favourite pasta shapes and cook your favourite pasta following the pack instructions - all options work here. Gluten free and spelt options are delicious too. Meanwhile, blitz the sauce with a hand blender until smooth, season and return to the heat to keep warm while the pasta cooks. Drain the pasta and toss through the sauce. Then serve in bowls topped with shaved parmesan and rocket leaves (maybe keep the leaves for the adults only?!) or however you want to present it to the pack! Dive straight in and enjoy!
