Ingredients (Serves 2 little tummies!) -

🛒  2 Nana Manners Silly Sausages (Available at Tescos)

🛒  1 tsp vegetable oil

🛒  ½ orange/yellow pepper, cut into small chunks

🛒  ½ red onion, sliced

🛒. ½ corn on the cob

🛒  ½ 400g tin mixed bean salad, drained and rinsed

🛒  ½ 400g tin Italian chopped tomatoes

🛒  1 ½ tbsp barbecue sauce

🛒  Small pinch of fresh parsley, roughly chopped (optional)

✅ How to cook -

⭐️ Preheat your oven to 180°C (fan)

⭐️ Put the oil in a medium roasting tin and heat in the oven for 10 mins.

⭐️ Next add the Silly Sausages, sliced onion and pepper, toss to coat in the hot oil and roast for 10 mins.

⭐️ Whilst the Silly Sausages are cooking, heat a griddle pan and

griddle the corn for 15 mins, turning occasionally, until

charred all over (this makes it super tasty!)

⭐️ Next carefully remove the kernels by standing the cob firmly on a chopping board and slicing with a sharp knife.

Remove the Silly Sausages from the oven and stir in the beans, tomatoes and barbecue sauce (yum!)

⭐️ Return to the oven for 15 mins until the sausages are cooked through. Remove from the oven.

⭐️ In a small bowl, mix the corn and parsley and sprinkle this over your delicious Cowboy Casserole! 👌
